Zucchini ajlouk is a traditional Tunisian dish. It is a salad made with cooked zucchini that has been mashed into a purée and seasoned with a blend of spices and harissa, as well as garlic and olive oil.
The word ajlouk (or adjlouk, ajlouka depending on the transcription) refers in Tunisia to a purée or cooked salad made from vegetables (often zucchini, bell peppers, or eggplant) seasoned with garlic, spices, olive oil, and sometimes harissa.
It is a dish reminiscent of mechouia, but in a puréed form, served cold or warm as an appetizer.
This zucchini ajlouk is traditionally served during a kémia, the Tunisian aperitif. It also makes a wonderful accompaniment to grilled meat or fish during a summer meal.
It’s a very easy recipe to prepare, and the ingredients are easy to find in France. It adds a touch of freshness and an oriental flavor as a spread, or “dip,” for a cocktail party.
Personally, I like to enjoy this ajlouk nice and cold, so I recommend preparing it in advance—preferably the day before—so it has time to chill.
Enjoy, and thank you in advance for your comments 😊

Hello. Which harissa should I buy—in a tube or in a jar? Thanks
Hello, you can use harissa from a tube or a jar—it really depends on what you prefer. Personally, I tend to use the tube version because I don’t use it very often and I can keep it a little longer in the fridge.
But if you use it regularly, the jar version will work perfectly, and you might even find more variety and better quality in jars!
Delicious, especially when served cold in the summer
Delicious and super easy
Well done
I've made this several times already, and I found it simple and really delicious.
