Instructions
You can leave the zucchini skin on, as it’s full of flavor and vitamins. In that case, it’s best to use organic zucchini. Cut the zucchini into pieces and steam them for 15 minutes.
Meanwhile, peel and remove the germ from the garlic cloves. Chop them coarsely. Rinse the cilantro and remove the stems.
Once they're done cooking, rinse the zucchini under cold water and place them in a colander to drain. You can squeeze them by hand to remove the excess water.
Using a food processor
If you have a food processor, place all the ingredients in the food processor bowl: zucchini, garlic, olive oil, lemon, spices, cilantro, and salt.
Blend until the mixture is smooth and uniform.
Without a blender
If you don't have a food processor, you can mash the zucchini with a fork in a bowl, add the garlic (pressed through a garlic press), and then the remaining ingredients: olive oil, lemon juice, spices, cilantro, and salt.
Let it chill in the fridge for at least 1 hour. If you're short on time, you can also put your ajlouk in the freezer to chill.
