Some friends recently treated me to this delicious chicken stew with green olives, which is filled with the aromas of Provence (olives, tomatoes, thyme, and olive oil). After some lengthy negotiations, they finally shared their recipe with me… Now it’s my turn to share it with you, and I hope you’ll enjoy it!
As you’ll see, it’s a very simple recipe to make, with relatively little initial prep, and it then simmers for a long time without you having to worry about it!
It’s therefore the perfect family dish, but it’s also perfectly presentable for a meal with friends.
If there are young children at the table, you might want to reduce the amount of white wine and replace the missing volume with water or chicken broth.
To serve with this chicken simmered with green olives, you can prepare steamed potatoes, pasta (tagliatelle, spaghetti…), rice, or even bulgur.
