I like to open a jar of lentils cooked with vegetables every now and then, but until now I’d never tried making them myself. Thanks to this recipe, I no longer need to buy jars!
It’s super simple, tasty, and much cheaper than buying the same thing at the grocery store! Paired with a serving of brown rice, these lentils cooked with vegetables also make for an interesting alternative to animal protein.
As you’ll see in the recipe, I don’t add any fat—no oil or butter—to prepare these lentils. This makes it a very healthy vegan dish that’s suitable for all diets and dietary restrictions!
No need to soak the lentils overnight—everything is prepared fresh.
Plus, green lentils keep for a very long time in the pantry. So all you’ll need to do is buy (or pick!) a few fresh vegetables to make this dish.
