Here is the famous recipe for the chocolate and almond cake my mom used to make for us—I call it the Queen of Sheba.

This rich, dark chocolate cake is one of my childhood favorites, which I used to enjoy with a big glass of fresh milk in the summer… Very simple to make, it uses almost nothing but pantry staples, aside from butter and eggs.

As a bit of trivia, the cake’s name comes from a biblical reference: the Queen of Sheba (a legendary figure mentioned in the Old Testament and the Quran) is associated with exoticism, refinement, and wealth. French pastry chefs thus drew on this image of luxury and sophistication to name this moist chocolate cake…

There are, of course, many variations of the Queen of Sheba cake, some topped with almonds, sometimes lightly flavored with coffee or rum, or even covered in chocolate icing. Julia Child also made it famous in the English-speaking world… but my mom’s simple version (who is not Julia Child) will always be my favorite 🧡

And in any case, this Queen of Sheba cake is sure to delight all chocolate lovers.

Ingredients for Reine de Saba

  • Image de dark chocolate
    125 g of dark chocolate full-bodied
  • Image de butter
    125 g of butter
  • Image de brown sugar
    125 g of brown sugar or muscovado
  • Image de ground almonds
    60 g of ground almonds
  • Image de flour
    2 tbsp of flour
  • Image de egg
    3 eggs

Reine de Saba : instructions

  • 1
    Combine the flour, sugar, chocolate, egg yolks, and melted butter.
  • 2
    Preheat the oven to 180°C.
  • 3
    Beat the egg whites until stiff peaks form, then gently fold them into the mixture in the bowl.
  • 4
    Bake for 30 minutes in a buttered or parchment-lined pan. Note: You can use a springform pan to present this Queen of Sheba cake beautifully and make it easier to slice. Simply remove the outer ring of the pan and serve it as is.

    Once the cake is done baking, serve it warm or cold.

Notes

For an even more appealing and indulgent finish, you can dust the cake with low-fat cocoa powder or powdered sugar.
For dessert or tea time, serve this Queen of Sheba cake with whipped cream or a scoop of vanilla ice cream.
