Here is the famous recipe for the chocolate and almond cake my mom used to make for us—I call it the Queen of Sheba.
This rich, dark chocolate cake is one of my childhood favorites, which I used to enjoy with a big glass of fresh milk in the summer… Very simple to make, it uses almost nothing but pantry staples, aside from butter and eggs.
As a bit of trivia, the cake’s name comes from a biblical reference: the Queen of Sheba (a legendary figure mentioned in the Old Testament and the Quran) is associated with exoticism, refinement, and wealth. French pastry chefs thus drew on this image of luxury and sophistication to name this moist chocolate cake…
There are, of course, many variations of the Queen of Sheba cake, some topped with almonds, sometimes lightly flavored with coffee or rum, or even covered in chocolate icing. Julia Child also made it famous in the English-speaking world… but my mom’s simple version (who is not Julia Child) will always be my favorite 🧡
