I made this raw brownie recipe with dates and peanuts for a party at a friend's house. Since I'm gluten- and lactose-intolerant myself, I really enjoy this "SGSL" (gluten-free, lactose-free) dessert recipe. It’s absolutely delicious and appeals to everyone, young and old alike, and adapts to all dietary restrictions!
In fact, this recipe is also fully adaptable to a vegan diet. To do so, simply replace the crème fraîche with plant-based cream (coconut cream, for example), which you can easily find at organic grocery stores or even in supermarkets.
Another unique feature of this brownie is that it doesn’t require baking. This is especially nice in the summer, when you don’t necessarily want to turn on the oven when it’s already hot enough outside 😅 You’ll need to let the mixture set in the fridge for a few hours, though, and only take it out right before serving.
Since there’s no baking involved, this raw chocolate cake is very easy to make, and you can even get your kids to help without the risk of burns!
But you might be wondering how you can make a chocolate brownie that holds its shape without any baking? The secret is to blend various dried fruits (dates, peanuts, coconut…) with cream and peanut butter. Once this mixture is spread into a pan, cover it with a chocolate "ganache" and whole peanuts. And there you go—it’s done!
