Lentils cooked with vegetables

  • Rinse the lentils and add them to a pot.
    Cover the lentils with twice their volume of water.
  • Peel and wash the leeks; scrub and rinse the carrots and celery.
    Cut them into rounds and add them to the pot.
  • Peel and chop the onion, then stick a clove into one of the pieces.
    Peel and mince the garlic.
    Add the onion and garlic to the pot.
  • Add the thyme and bay leaf, and season with salt and pepper.
    Cover and simmer for 30 minutes.
