Here’s my tried-and-true, delicious recipe for avocado and smoked salmon verrines.

If you’re looking for a colorful and slightly gourmet appetizer, these pretty bites should catch your eye. They’re very easy to make, featuring mashed avocado, chive whipped cream, and ginger-flavored smoked salmon. 

I’ve made them on several occasions, and honestly, they’re a guaranteed hit every time 😋

However, the only challenge, if you decide to make them at the last minute, is finding perfectly ripe avocados. And that’s a real headache—I even tried microwaving them once (don’t try this at home!).

So I recommend buying your avocados a few days in advance to give them time to ripen a bit if needed.

Ingredients for Verrines d'avocat et saumon fumé

  • Filling

    4 lawyers average size
  • Image de smoked salmon
    4 slices of smoked salmon About 180 g
  • Image de lime
    1 lime optional; slice into rounds for garnish
  • Image de lime
    2 limes for the juice
  • Image de whipping cream
    25 cl of whipping cream that is, liquid, and—importantly—whole, otherwise it won't firm up when whipped
  • Image de chives
    2 tbsp of chives chopped
  • Image de ginger
    1 tuber of ginger not too big
  • Kitchen utensils
  • Image de small glass
    4 small glasses
  • Image de jars funnel

Verrines d'avocat et saumon fumé : instructions

  • 1
    Scoop out the avocado flesh and mash it into a puree.
    Add the juice of one lemon to flavor it and prevent it from turning brown.
  • 2
    Whip the heavy cream until it forms stiff peaks.
    Stir in the chives.
  • 3
    Cut the slices of smoked salmon into very small cubes, and drizzle a few drops of lemon juice over them.
    Peel and chop the ginger.
  • 4
    Place the salmon in a mixing bowl, and sprinkle one tsp of ginger per serving over the salmon. Mix well—fresh ginger is strong!
  • 5
    Start by gently spooning in the avocado purée, followed by the whipped cream, and finish with the salmon.
    Add a lime wedge for garnish.
    The Chef's Tip
    Prepare all the glasses at the same time rather than one after the other. This way, you’ll have the same amount in each one.

    Keep refrigerated.
