Verrines d’avocat et saumon fumé

  • Scoop out the avocado flesh and mash it into a puree.
    Add the juice of one lemon to flavor it and prevent it from turning brown.
  • Whip the heavy cream until it forms stiff peaks.
    Stir in the chives.
  • Cut the slices of smoked salmon into very small cubes, and drizzle a few drops of lemon juice over them.
    Peel and chop the ginger.
  • Place the salmon in a mixing bowl, and sprinkle one tsp of ginger per serving over the salmon.
    Mix well—fresh ginger is strong!
  • Start by gently spooning in the avocado purée, followed by the whipped cream, and finish with the salmon.
    Add a lime wedge for garnish.
    The Chef’s Tip
    Prepare all the glasses at the same time rather than one after the other. This way, you’ll have the same amount in each one.
