Here is my recipe for coconut and persimmon panna cotta.

Panna cotta, literally “cooked cream” in French, is an Italian dessert that originated in Piedmont.

Here I’m offering a variation on the classic recipe that highlights the persimmon. It’s a fruit we don’t necessarily use in cooking, yet it’s full of flavor and sensory qualities!

In this Coconut-Persimmon Panna Cotta recipe, I’ve replaced pork gelatin with agar-agar, a gelling seaweed. As a result, this dessert is completely vegetarian!

Ingredients for Panna Cotta Coco-Kaki

  • Image de heavy cream
    40 cl of heavy cream
  • Image de coconut milk
    10 cl of coconut milk
  • Image de sugar
    20 g of sugar You can also use vanilla sugar
  • Image de shredded coconut
    10 g of shredded coconut Optional
  • Image de agar-agar
    2 g of agar-agar One packet
  • Image de khaki
    260 g of khaki That is, 4 small persimmons

Panna Cotta Coco-Kaki : instructions

  • Panna cotta
    • 1
      Mix the agar-agar powder into a little cold cream.
    • 2
      Add the remaining cream, coconut milk, and sugar.
    • 3
      Bring to a boil and cook for 2 minutes, stirring constantly.

      Add the shredded coconut.
    • 5
      Pour into small glasses and chill for a few hours.
  • Persimmon sauce
    • 6
      Scoop out the flesh of the persimmons with a spoon and blend it in a food processor.

      Pour the persimmon coulis over the panna cotta.
