Panna cotta, literally “cooked cream” in French, is an Italian dessert that originated in Piedmont.
Here I’m offering a variation on the classic recipe that highlights the persimmon. It’s a fruit we don’t necessarily use in cooking, yet it’s full of flavor and sensory qualities!
In this Coconut-Persimmon Panna Cotta recipe, I’ve replaced pork gelatin with agar-agar, a gelling seaweed. As a result, this dessert is completely vegetarian!
