I drew inspiration for this recipe for roasted salmon with fresh herbs from the book Cuisiner… Trop Facile !, Martina Solter / Kathrin Ullerich, Solar, 160 pages, which features a selection of recipes that are indeed quite simple to prepare, yet nonetheless original and delicious! 

As for this recipe in particular, the marinade in which the salmon bakes in the oven is to die for, featuring a blend of fresh aromatic herbs—each one more fragrant than the last—that cook in the oil in the oven, soaking up the salmon’s fat.

You can serve this roasted salmon with fresh herbs alongside lightly buttered basmati rice or boiled potatoes. Use the cooking marinade as a sauce for this side dish.

By the way, if you have any of this marinade left over, you can use it to pan-fry lean fish like cod: after dredging the fillets in flour, drizzle with the sauce and let them rest before searing them in a very hot skillet.

Ingredients for Saumon à l'Orientale

  • For fish
  • Image de salmon steak
    4 salmon fillets 150 g each
  • Image de lime
    1 lime
  • Image de fresh ginger
    10 g of fresh ginger
  • Image de fresh cilantro
    1 bouquet of fresh cilantro
  • Image de sage
    5 leaves of sage fresh
  • Image de thyme
    2 branches of thyme
  • Image de Dijon mustard
    1 tsp of Dijon mustard
  • Image de salt and pepper
    salt and pepper
  • Image de olive oil
    5 tbsp of olive oil

Saumon à l'Orientale : instructions

  • 1
    Pour the mustard, ginger, 1/2 tsp of salt, and a pinch of pepper into a bowl.
  • 2
    Gradually pour in the oil and emulsify.
  • 3
    Add 4 tbsp of lime juice, 2 tbsp of water, and the chopped herbs.
  • 4
    Place the salmon fillets in a buttered earthenware dish. Drizzle with the vinaigrette and let sit for 30 minutes.

     Turn on the broiler.
  • 6
    Place the fish in the oven (on the second rack from the top) and broil it for 20 minutes in a very hot oven (220°C).
