As for this recipe in particular, the marinade in which the salmon bakes in the oven is to die for, featuring a blend of fresh aromatic herbs—each one more fragrant than the last—that cook in the oil in the oven, soaking up the salmon’s fat.
You can serve this roasted salmon with fresh herbs alongside lightly buttered basmati rice or boiled potatoes. Use the cooking marinade as a sauce for this side dish.
By the way, if you have any of this marinade left over, you can use it to pan-fry lean fish like cod: after dredging the fillets in flour, drizzle with the sauce and let them rest before searing them in a very hot skillet.
