Vegetarian : Introduction

Vegetarian cuisine is based on a diet that excludes meat and fish, but it does not necessarily exclude animal products such as eggs, milk, cheese, or honey. This distinguishes it from vegan cuisine, which eliminates all animal products, including eggs, dairy products, and even gelatin or butter.

This dietary approach highlights the diversity of the plant world: grains, legumes, vegetables, fruits, nuts, seeds, and spices form the basis of complete and flavorful dishes. By cleverly combining plant-based proteins (for example, lentils and rice, or chickpeas and semolina), vegetarian cuisine provides a balanced nutritional intake, rich in fiber, minerals, and antioxidants.

🍽️ Major categories of vegetarian dishes

  • 🥗 Appetizers and hearty salads: quinoa tabbouleh, lentil salad, hummus, falafels, grilled vegetable open-faced sandwiches, or seasonal cream soups.



  • 🍝 Main dishes: vegetable curry with coconut milk, spinach and ricotta lasagna, chili sin carne, vegetable gratin, chickpea patties, or marinated tofu.
  • 🍞 Rich and varied side dishes: sweet potato mash, couscous with roasted vegetables, basmati rice with cumin, or sautéed green beans and almonds.
  • 🍰 Vegetarian desserts: fruit cakes, plant-based milk puddings, nut muffins, and gelatin-free panna cotta.

Vegetarian cuisine is not simply “meat-free cooking,” but a way of rethinking meals centered on produce, seasonality, and nutritional balance. It is a creative, colorful, and ethical cuisine that appeals to both committed vegetarians and those who simply wish to reduce their meat consumption.
