Chimichurri is the sauce traditionally used in Argentina and Uruguay to season grilled meats in an "asado."

- 1Finely chop the garlic, parsley, and green chili pepper.
- 2In a bowl, combine the garlic, parsley, green chili, and ground red chili.
- 3Add one tsp of chili powder, half a tsp of oregano, half a tsp of thyme, two tsp of salt, and a pinch of pepper.
- 4Fill the cup three-quarters full with water, stir, and refrigerate for a few hours to allow the ingredients time to release their flavors.
- 5Then add the remaining quarter cup of vinegar and a tsp of olive oil.
- 6Let it chill overnight, and the next day... cook up a delicious "asado"!
