Chimichurri is the sauce traditionally used in Argentina and Uruguay to season grilled meats in an "asado."
This recipe was shared with us by a native of Buenos Aires named Eduardo Rejduch de la Mancha—the real deal!

Ingredients for Chimichurri

  • Image de garlic
    6 pods of garlic
  • Image de parsley
    4 branches of parsley
  • Image de green chili pepper
    1/2 green chili pepper
  • Image de red chili pepper
    2 tbsp of red peppers ground
  • Image de chili powder
    chili powder Paprika
  • Image de oregano
    oregano
  • Image de thyme
    thyme
  • Image de vinegar
    vinegar
  • Image de olive oil
    olive oil
  • Image de salt and pepper
    salt and pepper

Chimichurri : instructions

  • 1
    Finely chop the garlic, parsley, and green chili pepper.
  • 2
    In a bowl, combine the garlic, parsley, green chili, and ground red chili.
  • 3
    Add one tsp of chili powder, half a tsp of oregano, half a tsp of thyme, two tsp of salt, and a pinch of pepper.
  • 4
    Fill the cup three-quarters full with water, stir, and refrigerate for a few hours to allow the ingredients time to release their flavors.
  • 5
    Then add the remaining quarter cup of vinegar and a tsp of olive oil.
  • 6
    Let it chill overnight, and the next day... cook up a delicious "asado"!
