Here’s my recipe for a duo of cream of cauliflower and broccoli soups, flavored with galangal. I learned how to make this dish during a cooking class. It has since become one of my go-to recipes for an original, gourmet appetizer that will impress your guests and delight their taste buds 🤩

This soup duo is truly unique and a perfect example of "fusion cuisine." It combines two familiar vegetables with an Asian spice: galangal. If you’re not familiar with this spice, you’re going to love it!

Galangal is a root vegetable that’s milder than ginger and has a captivating aroma. It’s a key ingredient in many Thai soups.

In Asia, galangal is believed to have aphrodisiac properties for women, while ginger is said to be more suited for men. I won’t weigh in on that aspect, but I can guarantee that this recipe will appeal to everyone 😉

Each of the soups is also made with coconut milk, which gives them a creamy texture and a pleasant flavor with hints of Southeast Asia.

Ingredients for Duo de veloutés au galanga

  • Cream of Cauliflower Soup
  • Image de cauliflower
    1 cauliflower
  • Image de shallot
    1 shallot
  • Image de galangal
    100 g of galangal about half a root; galangal is generally available at any Asian grocery store
  • Image de coconut milk
    40 cl of coconut milk
  • Image de chicken stock
    1 l of chicken stock or the equivalent amount of broth if you don't have homemade chicken stock
  • Cream of Broccoli Soup

    1 bouquet of broccoli
  • Image de shallot
    1 shallot
  • Image de lemongrass
    1 stem of lemongrass Lemongrass is generally available at any Asian grocery store
  • Image de galangal
    100 g of galangal about 1/2 a root; galangal is generally available at any Asian grocery store
  • Image de coconut milk
    40 cl of coconut milk
  • Image de chicken stock
    60 cl of chicken stock or the equivalent amount of broth if you don't have homemade chicken stock
  • Image de salt and pepper

Duo de veloutés au galanga : instructions

  • 1
    Blanch the cauliflower and broccoli separately for 2 minutes in boiling salted water. This helps preserve the vegetables' color and flavor.

    Finely chop the shallot, scrape the galangal, remove as much flesh as possible using a vegetable peeler, and set aside the core to infuse in the cream soups.

    Finely chop the lemongrass, removing the outer layer (which is too tough).
  • 4
    Sauté the following in a little olive oil in two separate pans:
    - the broccoli with the galangal, lemongrass, and shallot;
    - the cauliflower with the galangal and shallot.

    Prepare the chicken stock for each of the two soups, using the amounts listed in the ingredients.
    If you don't have homemade chicken stock, dissolve a bouillon cube in the corresponding amount of boiling water. Generally, you'll need one bouillon cube per half liter of water.

    Thin each of the two soups with coconut milk and chicken stock, then add the galangal core. Cook for 15 minutes and blend (you can blend the galangal core, but in that case you’ll need to blend for a long time).

    Adjust the seasoning, then serve the cauliflower soup in a soup bowl and the broccoli soup in a ramekin placed in the center.
