Here is my recipe for an infusion of orange peel and Soho, served with segments of Chinese grapefruit. It’s a very original and contemporary dessert, perfect for a holiday meal or a gourmet dinner with friends.

- 1Peel the oranges, removing all the white pith, and cut the segments (supremes) between each membrane.
- 2Combine the juice, Lambrusco, Soho, and pepper in a saucepan and heat, then add the agar-agar and bring to a boil.
- 3Pour into a bowl to cool, then transfer to your molds, glasses, or small serving cups…
- 4Let it set in the fridge for 1 hour.
- 5Serve with the chicken breasts and a dollop of cottage cheese mixed with honey
Very original and, in the end, quite easy to make.
