Here is my recipe for an infusion of orange peel and Soho, served with segments of Chinese grapefruit. It’s a very original and contemporary dessert, perfect for a holiday meal or a gourmet dinner with friends.

Ingredients for Infusion prise d’orange et soho, suprêmes de pomelos chinois

  • Image de Chinese pomelo
    2 Chinese pomelo
  • Image de sugar
    30 g of sugar
  • Image de orange juice
    1/2 l of orange juice
  • Image de Soho
    20 g of Soho
  • Image de Lambrusco
    60 g of Lambrusco As for the color, replace it with something else if necessary
  • Image de Sichuan pepper
    15 grains of Sichuan pepper
  • Image de cottage cheese
    100 g of cottage cheese
  • Image de honey
    1 tbsp of honey
  • Image de agar-agar
    3 g of agar-agar

Infusion prise d’orange et soho, suprêmes de pomelos chinois : instructions

  • 1
    Peel the oranges, removing all the white pith, and cut the segments (supremes) between each membrane.
  • 2
    Combine the juice, Lambrusco, Soho, and pepper in a saucepan and heat, then add the agar-agar and bring to a boil.
  • 3
    Pour into a bowl to cool, then transfer to your molds, glasses, or small serving cups…
  • 4
    Let it set in the fridge for 1 hour.
  • 5
    Serve with the chicken breasts and a dollop of cottage cheese mixed with honey
