This recipe for a sherry and shallot vinaigrette comes from the book Nature – Simple, Sain et Bon – Tome 2, Alain Ducasse, Alain Ducasse Eds., 365 pages.

This vinaigrette pairs perfectly with asparagus, enhancing its flavor without overpowering it.

You can also use it to add a touch of character and originality to a tomato salad or a steamed fish fillet.

Ingredients for Vinaigrette Xérès échalote

  • Image de shallot
    1 shallot
  • Image de olive oil
    3 tbsp of olive oil
  • Image de sherry vinegar
    2 tbsp of sherry vinegar
  • Image de Espelette pepper
    1 pinch of Espelette pepper
  • Image de tarragon
    1 strand of tarragon

Vinaigrette Xérès échalote : instructions

  • 1
    Mix the oil and vinegar in a bowl.
  • 2
    Peel the shallot, rinse the tarragon, and chop them finely. Add them to the vinaigrette.
  • 3
    Add a pinch of Espelette pepper. Season with salt and pepper to taste.

Notes

Since my first version, I've tried this vinaigrette with walnut oil. The rich flavor of this oil gives it a real burst of character and originality, making you fall in love with asparagus all over again!
