I recently made these little goat cheese and spinach pastries for a dinner party with friends. I was so proud of myself when my guests were blown away by this beautiful and delicious appetizer!

Yet, as you’ll see in this recipe, they’re really not difficult to make. In fact, preparing these delicious little pastries requires very little effort, especially since they’re baked in the oven.

Once baked, they’re a real treat for the eyes and the taste buds! The puff pastry forms a golden, crispy crust, enclosing an irresistible mixture of creamed spinach and melted goat cheese.

Pine nuts are optional, but I love the slight crunch they add to the filling, as well as their subtle, sweet flavor.

These goat cheese and spinach pastries make a wonderful appetizer or main course for a vegetarian meal, for example.

Ingredients for Mini puff pastries with goat cheese and spinach

    250 g of puff pastry
  • Image de spinach
    300 g of spinach costs
  • Image de garlic
    1 pod of garlic
  • Image de goat cheese log
    1/2 goat cheese log
  • Image de heavy cream
    4 tbsp of heavy cream
  • Image de pine nuts
    pine nuts optional
  • Image de salt, pepper
    salt, pepper

    Wash and trim the spinach.

    Peel and mince the garlic.

    Place a mixture of oil and butter in the bottom of a skillet or sauté pan.
    Add the spinach and garlic, and cook for about 15 minutes.

    When it's done cooking, remove it from the heat, add the crème fraîche, and give it a stir.

    Roll out the puff pastry on a baking mat and try to shape it into a rough square.
    Then cut the dough into 4 squares using a knife or a serrated pastry wheel.

    Preheat the oven to 180°C.
    Place one to two tbsp of spinach on each square, followed by pine nuts (optional) and one or two slices of goat cheese.

    Gently seal the pastry by pressing lightly along the edges and corners.
    Repeat this step for the remaining pastries.

    Repeat the process for the remaining pastries, then brush them with egg yolk using a pastry brush.
    Place a baking rack under the baking mat, and bake for 15 minutes.

    Enjoy these spinach puff pastries while they're still hot, served with a green salad.
