  • For the skewers
  • Image de chicken breast
    300 g of chicken breasts Allow 150 grams per person if this is a main course
  • Image de lemongrass
    1 stick of lemongrass about 5–10 g
  • Image de turmeric
    1 tsp of turmeric fresh or powdered
  • Image de ginger
    1 finger of ginger fresh, about 15 g
  • Image de granulated sugar
    1 pinch of granulated sugar
  • Image de garlic
    1 pod of garlic
  • Image de frying oil
    3 tbsp of frying oil sunflower and peanut oils, which are more heat-resistant than olive oil
  • For the satay sauce
  • Image de garlic
    1 pod of garlic peeled and degermed
  • Image de coconut cream
    10 cl of coconut cream or coconut milk
  • Image de yellow curry
    1 tsp of yellow curry in powder form
  • Image de sweet paprika
    1 tsp of sweet paprika in powder form
  • Image de peanut butter
    3 tsp of peanut butter or peanut butter
  • Image de lime juice
    1 tbsp of lime juice
  • Image de soy sauce
    2 tsp of soy sauce
  • Image de sweet soy sauce
    1,5 tbsp of sweet soy sauce or tamarind
  • Image de peanuts
    25 g of peanuts

  • For the skewers
    • 1
      Prepare the marinade: Peel and finely dice the ginger, garlic, turmeric, and lemongrass.

      In a bowl, combine the ginger, oil, turmeric, garlic, sugar, and lemongrass.

      Cut the chicken breasts into strips lengthwise. Place the chicken pieces in a bowl and mix well. Let marinate for at least 30 minutes, but ideally overnight.

      Thread the chicken strips onto small skewers.

      Grill the skewers on a cast-iron griddle, a barbecue, or a lightly greased skillet for about 10 minutes.
      If baking in the oven, allow about 20 minutes at 200°C.

      Serve the skewers immediately, accompanied by the satay sauce.
  • For the satay sauce
    • 7
      Add all the ingredients (except the peanuts) to a bowl and blend until the mixture is well emulsified.

      Coarsely crush the peanuts using a mortar and pestle. I don’t recommend using a blender for this—or if you do, proceed with caution—because it tends to turn the peanuts into a powder, and your sauce will lose that delightful crunch.

      Add the peanuts to the rest of the mixture, and for a more elegant presentation, serve in small glasses or individual ramekins.
