Soy sauce is an essential condiment in Asian cuisine, particularly in Japan. It is made by fermenting soybeans, grains, water, and salt. This process develops a rich umami flavor that is salty, deep, and well-balanced.

There are several types of soy sauce. Each has its own distinct character and specific use. In Japan, it is called shōyu. The most common type is koikuchi shōyu. It is dark, balanced, and versatile. It works well with most dishes.
Usukuchi shōyu is lighter in color but saltier. It is used to preserve the natural color of foods, particularly in Kyoto cuisine.
Tamari contains little or no wheat. It offers a rounder, more intense flavor. It pairs well with sashimi and is often suitable for gluten-free diets.
Saishikomi shōyu is thicker and more concentrated. It is mainly used as a finishing sauce.
Finally, shiro shōyu is very light and mild. It highlights delicate ingredients without overpowering them.




Typical dishes featuring soy sauce

Soy sauce is used in many dishes. It adds flavor to stir-fried vegetables, grilled meats, and fish. It serves as a base for marinades for teriyaki chicken, yakiniku beef, or fish. It is added to broths and soups, such as miso soup or ramen, to enrich the flavor. It also accompanies sushi and sashimi, often paired with wasabi or pickled ginger. Finally, it is incorporated into vinaigrettes and cold sauces, adding depth and umami to salads and cold dishes.
