Basque-Style Roast Chicken

This recipe for Basque-style roast chicken is one of my go-to weeknight meals.

It’s perfect for a romantic dinner for two or a meal with the whole family. And thanks to this easy-to-prepare recipe, you can enjoy a homemade dish made with fresh ingredients without spending too much time in the kitchen!

I’ve tweaked the ingredients a bit from the traditional Basque-style chicken recipe. This makes for a lighter dish, perfect for everyday meals, but still very flavorful.

Ingredients for Poulet "Basquaise" minute

  • Image de chicken breast
    200 g of chicken breasts or fillet
  • Image de tomato
    3 tomatoes
  • Image de red bell pepper
    1 red bell pepper
  • Image de onion
    1 onion
  • Image de black olive
    10 black olives
  • Image de garlic
    2 pods of garlic
  • Image de bouquet garni
    bouquet garni thyme, bay leaf
  • Image de olive oil
    olive oil not extra virgin (does not withstand high temperatures)
  • Image de salt, pepper
    salt, pepper

Poulet "Basquaise" minute : instructions

  • 1
    Preheat the oven to 220°C.
  • 2
    Rinse the tomatoes and slice them; rinse the bell pepper, remove the seeds, and cut it into half-centimeter-wide strips, then cut those strips in half. Peel the onion, remove the core, and finely chop it; do the same with the garlic. Cut the chicken breasts into pieces.
  • 3
    Put everything in a mixing bowl, add the olives and the bouquet garni, season with salt and pepper, drizzle with a little oil, and mix well so that the oil coats all the ingredients.

    Pour the contents of the mixing bowl into a baking dish and bake for 25 minutes.

Notes

Serve with white rice.
