November marks the start of the cold season, with shorter days and a natural craving for rich, mild, and comforting dishes. It’s the perfect time to cook fall vegetables like pumpkins, butternut squash, cabbage, leeks, turnips, and Jerusalem artichokes—perfect for creamy soups, delicious gratin dishes, or comforting stews.




When it comes to fruit, apples, pears, and quinces take center stage, often paired with spices like cinnamon, vanilla, or cloves to warm up desserts. The first clementines make their appearance, heralding the holidays to come.

November is also the season for traditional dishes, with raclettes slowly making their way back onto tables, slow-cooked meats, and cozy evenings. Between All Saints’ Day and the end-of-year preparations, the kitchen becomes a warm space where we take the time to cook for our own enjoyment.

A month when we slow down, savor the moment, and gently prepare for the arrival of winter.
