Here’s my recipe for easy-to-make sweet crepes, flavored with lemon and orange blossom water. With this recipe, you’ll end up with a fluffy, perfectly fragrant crepe batter. You’ll see—the lemon zest in the batter is the little secret that makes them so fragrant and leaves you craving more😋

As you’ll see, this sweet crepe batter recipe is also very easy to make. In just over half an hour, including resting time, you’ll have a delicious batter ready to cook!

Toppings for Sweet Crepes

Depending on your taste, you can serve these crêpes with a variety of toppings. For example, sprinkle them with powdered sugar and top with one or two teaspoons of lemon juice.

But you can, of course, also opt for fruit jam (apricots, strawberries, plums, bitter oranges…). Another classic, chestnut cream works very well too, not to mention chocolate spread for those with a sweet tooth.

Finally, you can also top your crêpes with seasonal fruit cut into small cubes. Consider sprinkling on slivered almonds or crushed hazelnuts, lightly toasted. And for those with a sweet tooth, whipped cream to top it all off😋

Alcoholic variation

For a more pronounced flavor, you can replace the orange blossom water with Grand Marnier or rum, if you don’t mind using alcohol in the crêpe batter.

    2 tbsp of orange blossom water or Grand Marnier or rum

    In a mixing bowl, a large bowl, or the bowl of a blender, place the flour and make a well in the center.
    Melt the butter in a saucepan over low heat.

    Add the salt, sugars, lemon zest, orange blossom water, melted butter, half the milk, and the water.

    Blend or whisk, then add the lightly beaten eggs and the remaining milk.
    Finish blending in the blender or whisking.

    Grate the lemon zest into the mixture.

    Let the dough rest at room temperature, covered with a clean cloth, for at least 20 minutes.
    This will make the dough less elastic and easier to spread in the pan.
  • Making pancakes

      Once the batter has rested properly, it’s time to cook your pancakes and enjoy them!
      Grease your skillet or pancake pan with a paper towel dipped in oil, and heat it up.

      If you're using a skillet, pour the batter onto the hot skillet, starting from the center and tilting the skillet to spread the batter evenly across the surface.
      If you're using a griddle or a cast-iron griddle, pour the batter into the center and spread it out using a spatula (see utensils).

      Cook the pancake, and when the edges start to brown, gently lift it off the pan using a long pancake spatula.

      Flip the pancake and continue cooking the other side.
      Slide the pancake onto a large plate, and repeat the process until all the batter is used up.
