Instructions
In a mixing bowl, a large bowl, or the bowl of a blender, place the flour and make a well in the center. Melt the butter in a saucepan over low heat.
Add the salt, sugars, lemon zest, orange blossom water, melted butter, half the milk, and the water.
Blend or whisk, then add the lightly beaten eggs and the remaining milk. Finish blending in the blender or whisking.
Grate the lemon zest into the mixture.
Let the dough rest at room temperature, covered with a clean cloth, for at least 20 minutes.
This will make the dough less elastic and easier to spread in the pan.
Making pancakes
Once the batter has rested properly, it’s time to cook your pancakes and enjoy them! Grease your skillet or pancake pan with a paper towel dipped in oil, and heat it up.
If you're using a skillet, pour the batter onto the hot skillet, starting from the center and tilting the skillet to spread the batter evenly across the surface. If you're using a griddle or a cast-iron griddle, pour the batter into the center and spread it out using a spatula (see utensils).
Cook the pancake, and when the edges start to brown, gently lift it off the pan using a long pancake spatula.
Flip the pancake and continue cooking the other side. Slide the pancake onto a large plate, and repeat the process until all the batter is used up.
