The billig, the iconic griddle of Breton cuisine

The billig is a traditional griddle used specifically for making Breton crêpes and galettes. Typically made of cast iron, it features a large, perfectly flat surface capable of distributing heat evenly and consistently.

Modern billigs, particularly electric ones, feature a precise thermostat that allows you to set and maintain a constant temperature—an essential condition for making perfectly even crêpes.

In the kitchen, the billig ensures quick and controlled cooking, ideal for achieving thin, supple, and evenly golden crêpes.

Origins and Names of the Billig

The term “billig” comes from the Breton language and means “plate.” It is also known as a “galétière” or “crêpière,” but in Brittany, the word “billig” remains the cultural standard.

Its use began to spread in the 19th century with the widespread adoption of buckwheat galettes in Breton households, before becoming the central piece of equipment in crêperies.

Its durability and ability to handle continuous cooking explain its enduring popularity, both among home cooks and professionals.

The Krampouz Brand

Among billig manufacturers, Krampouz holds a special place. In Brittany, the name is so widespread and well-loved that it is commonly used as a synonym for billig.




This reputation is based on the reliability, precise heating, and durability of Krampouz billigs, which are widely adopted by professional crêperies as well as enthusiasts of Breton cuisine.

The advantages of the billig in the kitchen

The main advantage of the billig lies in its thermal stability, enhanced by the presence of a built-in thermostat. The cast iron stores heat and releases it evenly, while the thermostat prevents temperature fluctuations that interfere with cooking. This combination ensures uniform browning, consistent texture, and a smooth cooking process, without the need for constant adjustments.

How to make perfect crêpes in a billig

To make perfect crêpes in a billig, it is essential to let the griddle heat up gradually before the first batch.

  • The ideal temperature is around 190 to 200 °C for wheat crepes.
  • Buckwheat pancakes, on the other hand, cook at a slightly higher temperature, between 210 and 220 °C.

A light greasing at the start is sufficient to ensure the pancakes release easily. Thanks to the thermostat, it is possible to maintain this temperature range throughout the cooking process, guaranteeing thin, supple, and golden-brown pancakes without the risk of burning.

The rozell, an indispensable tool for the billig

The rozell, also known as a crêpe rake, is inseparable from the billig in Breton tradition. This wooden tool allows the batter to be spread with a fluid circular motion, without damaging the cooking surface.

It ensures an even thickness and a perfectly round shape. When used with a billig equipped with a properly calibrated thermostat, the rozell allows you to precisely replicate the techniques of Breton crêpe makers and produce authentic crêpes that are as beautiful as they are delicious.
