Saumon à l’Orientale

  • Pour the mustard, ginger, 1/2 tsp of salt, and a pinch of pepper into a bowl.
  • Gradually pour in the oil and emulsify.
  • Add 4 tbsp of lime juice, 2 tbsp of water, and the chopped herbs.
  • Place the salmon fillets in a buttered earthenware dish. Drizzle with the vinaigrette and let sit for 30 minutes.
  •  Turn on the broiler.
  • Place the fish in the oven (on the second rack from the top) and broil it for 20 minutes in a very hot oven (220°C).
