Instructions
Pour the mustard, ginger, 1/2 tsp of salt, and a pinch of pepper into a bowl.
Gradually pour in the oil and emulsify.
Add 4 tbsp of lime juice, 2 tbsp of water, and the chopped herbs.
Place the salmon fillets in a buttered earthenware dish. Drizzle with the vinaigrette and let sit for 30 minutes.
Turn on the broiler.
Place the fish in the oven (on the second rack from the top) and broil it for 20 minutes in a very hot oven (220°C).
