Here is my recipe for an olive, bell pepper, and feta cake—perfect for a summer picnic.

I was inspired to make this delicious cake by a recipe from the famous book Les Cakes de Sophie, Sophie Dudemaine, Minerva, 160 pages.

This cake is very easy to make and bursting with the colors and flavors of summer ☀️

It’s perfect for a picnic or as an appetizer for a cocktail party.

  • Image de grated Gruyère cheese
    3.5 oz of grated Gruyère cheese
  • Image de green bell pepper
    1 green bell pepper small

    1 red bell pepper small
  • Image de olive oil
    2 olive oil
  • Image de feta
    5.3 oz of feta Greek cheese
  • Image de black olive
    1.8 oz of black olives
  • Image de salt
    1 salt
  • Image de pepper
    2 pepper

Cake aux Olives aux poivron et à la Féta : instructions

  • 1
    Preheat your oven to 180°C (thermostat 6).
  • 2
    Wash the bell peppers, remove the stems, cut them in half, and remove the seeds.
  • 3
    Slice the bell peppers, then place them in a skillet with olive oil and salt.
    Sauté gently for 45 minutes.
    Let cool.
  • 4
    Dice the feta and add the halved olives. Set aside.
  • 5
    In a mixing bowl, whisk together the eggs, flour, baking powder, and pepper. Gradually
    stir in the oil and the milk, which has been warmed beforehand.

    Add the grated Gruyère cheese. Stir. Then
    fold the bell pepper, feta, and olive mixture into the dough, and stir.
  • 7
    Pour the mixture into an ungreased baking dish and bake for 45 minutes.
