Flan de brousse aux herbes : instructions
- 1Preheat the oven to 200°C (350°F). Grease a 22-cm round cake pan. Place it in the oven.
- 2Peel and finely chop the onions. In a skillet, heat 2 tbsp of oil and sauté the onions for 2 to 3 minutes over low heat. Finely chop the mint, cilantro, and basil leaves.
- 3Crack the eggs into a bowl. Season with salt and pepper. Beat them with a fork, stirring in the mashed brousse cheese, grated Parmesan, and fresh herbs.
- 4Pour everything into the pan with the onions. Cook for 1 minute over low heat, stirring constantly so the eggs set slightly.
- 5Remove the very hot pan from the oven. Pour the eggs into it. Return to the oven. Bake for 20 minutes. Let cool slightly, then remove from the pan. Serve warm or cold, sliced like a cake.
