Vinaigrette Xérès échalote

  • Mix the oil and vinegar in a bowl.
  • Peel the shallot, rinse the tarragon, and chop them finely. Add them to the vinaigrette.
  • Add a pinch of Espelette pepper. Season with salt and pepper to taste.
  • Notes

    Since my first version, I've tried this vinaigrette with walnut oil. The rich flavor of this oil gives it a real burst of character and originality, making you fall in love with asparagus all over again!
