Vinaigrette Xérès échalote

Ingredients

1 shallot

3 olive oil

2 sherry vinegar

1 Espelette pepper

1 tarragon
Instructions
Mix the oil and vinegar in a bowl.
Peel the shallot, rinse the tarragon, and chop them finely. Add them to the vinaigrette.
Add a pinch of Espelette pepper. Season with salt and pepper to taste.
Notes
Since my first version, I've tried this vinaigrette with walnut oil. The rich flavor of this oil gives it a real burst of character and originality, making you fall in love with asparagus all over again!
