This recipe for leek and potato purée is very easy to make and is perfect as a side dish for a family meal.

It’s absolutely delicious, with a hint of nutmeg and crème fraîche!

Ingredients for Poireaux en purée

  • Image de leek
    4 leeks Choose large ones, and use the whites
  • Image de potato
    4 potatoes large
  • Image de nutmeg
    2 pinch of nutmeg
  • Image de chervil
    1 tbsp of chervil chopped
  • Image de crème fraîche
    1 medium pot of crème fraîche
  • Image de water
    2 glasses of water
  • Image de salt and pepper

Poireaux en purée : instructions

  • 1
    Peel and wash the leeks and potatoes.
    Cut them into rounds.
  • 2
    Place them in a pressure cooker with water, nutmeg, salt, and pepper.
    Close the lid and cook for 10 minutes starting from the moment the valve starts to hiss.
  • 3
    Blend the purée in a blender or mash it with a potato masher.
    Add cream until you reach the desired consistency.
  • 4
    Heat again for 2 minutes, uncovered, stirring occasionally.
  • 5
    Serve after sprinkling with chopped chervil.

Notes

Using the same method, you can make purees from carrots, green beans, artichokes, turnips, and zucchini, using 500 g of peeled vegetables.
