This recipe for potato pancakes is inspired by the famous Rösti, which are very popular in Switzerland and Germany.

I found it in the excellent book Recettes Végétariennes du Monde Entier, Garance Leureux, La Plage, 160 pages, which is a real treasure trove of delicious vegetarian dishes.

These patties are easy and fairly quick to prepare, since the potatoes are already grated. These delicious patties will delight children as part of an everyday family meal, but they can also add a touch of indulgence as a side dish for a holiday meal.

Ingredients for Galettes de pommes de terre

    5 potatoes

    2 flour

Galettes de pommes de terre : instructions

  • 1
    Peel and grate the potatoes and onion. 
  • 2
    In a mixing bowl, combine the potatoes, onions, beaten eggs, and flour. Season with salt, pepper, and nutmeg.
  • 3
    Cook the pancakes in a small skillet.
    The pancakes should be no more than 1/2 cm thick.
  • 4
    Brown 1 minute over high heat at first. Then
    reduce the heat and cook for another 5 minutes.
  • 5
    Flip the pancakes with a spatula, and cook the other side for the same amount of time.
  • 6
    You can use several pans at the same time to speed things up.
    These pancakes should be crispy on the outside and fluffy on the inside!
