Here, I’ll show you how to make your own gingerbread spice mix. This mix is, of course, essential for baking this delicious traditional cake, which we love to enjoy during the cold season.

But the gingerbread mix also adds wonderful flavor to dishes made with squash, such as soups or other gratins!

Ingredients for Mélange à pain d'épices

  • Image de cinnamon
    20 g of cinnamon or in sticks and crushed
  • Image de star anise
    2 stars of star anise
  • Image de clove
    10 cloves
  • Image de coriander seeds
    10 g of coriander seeds
  • Image de green anise
    7 g of green anise in powder or grain form
  • Image de ground ginger
    1 tsp of ground ginger
  • Image de nutmeg
    1/4 tsp of nutmeg grated

Mélange à pain d'épices : instructions

  • 1
    Combine the whole spices (cinnamon sticks (simply crushed), star anise, cloves, coriander seeds, and anise seeds).
  • 2
    Blend them in a food processor or grind them finely in a mortar.
  • 3
    Add the ground spices and mix well with a whisk or spoon. Store the spices in an airtight container to keep them fresh longer.
