Where and when can you find acacia flowers?
Toward the end of April, black locust trees, also known as "false acacia," produce numerous clusters of white flowers with a pleasant scent. These flowers are edible and even have soothing properties when brewed as an infusion. You’re probably wondering what “real” acacia is in this case? Well, it’s a type of tropical wood found in Africa, Australia, and South America.
How do you make these acacia flower fritters?
If you’ve never made these fritters before, you’ll see—it’s very simple. Just prepare the batter and let it rest for an hour or two, then fry the flower clusters after dipping them in the batter. For me, the trickiest part of this recipe is keeping the frying oil at the right temperature, but I’ll explain all that below 🙂
Precautions to take with acacia flowers
When picking the flowers, be careful not to confuse acacia flowers with those of another tree, the laburnum. The key difference is the color: the flowers should be white, not yellow.
How to make lactose-free and/or gluten-free fritters?
Finally, note that these acacia flower fritters are fully adaptable to a lactose-free and/or gluten-free diet. If you’re lactose intolerant, simply replace cow’s milk with beer or a plant-based “milk” (spelt, hemp, oat, soy, etc.).
For a gluten-free diet, simply replace the wheat flour with a low-gluten flour: rice, spelt, buckwheat, chickpea, or chestnut flour—whichever you prefer!
