Here is my recipe for flat green bean fritters, also known as Pataniscas de Feijo Verde in Portuguese. I discovered this dish during a cooking class in Lisbon and have made it several times since.

By the way, you may have already seen these flat green beans in Japanese dishes. They actually come from Portugal, which is said to have introduced them to the Land of the Rising Sun during the Age of Discovery.

Ingredients for Beignets de haricots plats

  • Image de flat green beans
    14.1 oz of flat green beans
  • Image de flour
    4.4 oz of flour
  • Image de egg
    2 eggs
  • Image de beer
    3.4 fl oz of beer or milk
  • Image de olive oil
    1 tbsp of olive oil
  • Image de baking powder
    1 tsp of baking powder
  • Image de salt, pepper
    salt, pepper
  • For frying
  • Image de frying oil
    1 liter of frying oil
  • Kitchen utensils
  • Image de deep fryer
    deep fryer optional: a cast-iron casserole dish or a deep skillet
  • Image de cooking thermometer
    cooking thermometer very useful if you don't have a deep fryer

Beignets de haricots plats : instructions

  • 1
    Rinse and trim the ends off the green beans, then blanch them in lightly salted boiling water for 3 minutes.
  • 2
    Drain thoroughly and let cool.
  • 3
    Make the batter: Add the flour, beer, olive oil, salt, and pepper to a mixing bowl and mix well.
  • 4
    Add the eggs one at a time, and beat the mixture until the batter is smooth and lump-free.
  • 5
    Heat the cooking oil in a pot or your deep fryer.
    Personally, I use a to check that the oil is at the right temperature (170°C).
    Dip the beans one by one into the batter, and fry them on both sides until the fritters are golden brown.

    Remove the fritters from the pan and place them on paper towels. Serve immediately and enjoy while they're still hot!
