Here is my dear friend Mrs. Zaplana’s recipe for squid in white wine, served with saffron rice!

This recipe is full of Mediterranean flavors and showcases squid (also known as calamari, chipirons, or supions, depending on the region!).

These squid in white wine are very easy to prepare; all you need to do is buy some nice, fresh squid from your favorite fishmonger. You’ll cook the squid in a delicious white wine and onion sauce. At the same time, you’ll simmer the rice in a delicious aromatic blend of garlic, saffron, and white wine!

Squid in white wine : instructions

  • Preparing the squid
    • 1
      Cut the squid into rings or small pieces.
      Bring the white wine to a boil to reduce its acidity, then set aside.

      In a skillet, sauté a large onion, thinly sliced, in a little olive oil until it becomes slightly translucent.

      Remove the onion from the pan and add the squid.
      Cook the squid until the liquid has evaporated.

      When the squid begins to brown, add the onions.
      Cover and simmer for 5 minutes.

      Next, add the flour and stir briefly, then add the boiled white wine and hot water.
      Peel and finely mince the garlic, then add it to the mixture.
      Season with salt and pepper.

      Let it continue cooking, covered, over low heat.
      The total simmering time should be 30 minutes .
  • Preparing the rice

      Bring to a boil a volume of water equal to three times the volume of the rice.
      Add the white wine, salt, pepper, garlic, saffron, and sage.

      Next, add the rice and let it simmer for about 20 minutes (though this will depend on the type of rice you choose—precooked, white, semi-whole grain, or whole grain, in order of increasing cooking time).
      Keep an eye on it while it cooks; the rice should still be firm when done.

      Drain the rice, place it in a serving dish with a knob of butter.
      Serve the squid with the rice right away!
