During the colder months, I love cooking squash in all sorts of ways: soups, purées, but also simply roasted in the oven… And this oven-roasted butternut squash with a spice blend is a simple recipe to prepare, but one that will surprise you with its originality.
The subtle flavor of the butternut squash is beautifully enhanced by the gingerbread spice mix that I made myself, though you can also find it in stores.
For this recipe, I opted for slow baking at a relatively low temperature so that the squash slices become tender and nicely roasted.
This recipe for oven-roasted butternut squash can be prepared in advance and enjoyed hot or cold, depending on the occasion. It makes an excellent side dish—flavorful yet light.
