I love braised endives, and I recently tried (with great success) cooking them in the oven instead of in a skillet as I used to do. So here’s my exclusive, easy, and delicious (yes, really!) recipe for oven-braised endives.

How do you make these oven-roasted endives?

In this recipe, the first secret to getting nicely roasted endives is to cut them in half before cooking. They’ll come out of the oven golden brown and tender, especially since I cook them on a buttered baking sheet and in chicken broth, which keeps them from drying out and adds extra flavor.

What to serve with your roasted endives?

These roasted endives make an excellent side dish. You could serve them with steamed fish, for example, or even grilled meat or tofu.

    500 g of endives (Allow one to two endives per person)
  • Image de butter
    20 g of butter
  • Image de chicken broth
    50 cl of chicken broth
  • Image de three-berry blend
    1 pinch of three-berry blend
  • Image de olive oil
    3 tbsp of olive oil
  • Image de onion
    1 onion
  • Image de garlic
    1 pod of garlic

Oven-roasted endives : instructions

  • 1
    If you don't have fresh chicken broth, dissolve a bouillon cube in water or steep a bouillon packet in boiling water.

    Remove the wilted leaves from the endives.
    Using a sharp knife (paring knife), scoop out the inside of the bulb, which is often bitter.

    Rinse the endives, shake them to remove excess water, and pat them dry with a kitchen towel.
    In fact, water can also make endives taste bitter.

    Cut each endive in half lengthwise.

    Cut the butter into thin slices and scatter them on the baking sheet.
    Add a little oil as well.

    Arrange the endive halves on the baking sheet.

    Peel, remove the core, and finely chop the onion, and do the same with the garlic clove.
    Sprinkle the onion and garlic over the endives.
    Preheat your oven to 180°C.

    Pour the broth over the endives.
    Crush the three-berry mixture in a mortar, then sprinkle it over the endives.

    Place it on the second-to-bottom rack in the oven and bake for 30 minutes.

    Halfway through cooking, remove the endives and spoon some of the cooking liquid over them again using a tbsp.

    Parfait, tout simple, sans crème, sans fromage, sans jambon, comme dit dans le précédent commentaire. Juste les légumes ! Vite fait en plus, et très bon. J’ai servi ces endives avec des côtes de porc aux carottes.
