Here is my recipe for almond croquants, just as my father makes them for the holidays.

Croquants are one of the thirteen Provençal desserts served at Christmas. They are a very popular treat during the holiday season.

They’re very easy to make, and I’ve chosen to use less sugar to make them lighter.

Ingredients for Croquants aux amandes

  • Image de flour
    500 g of flour
  • Image de sugar
    300 g of sugar
  • Image de salt
    1 pinch of salt
  • Image de almonds
    350 g of almonds
  • Image de egg
    5 eggs including one for glazing the croquants

Croquants aux amandes : instructions

  • 1
    Set aside one egg for glazing. Mix all the ingredients together until you have a very thick batter. Let it rest for 5 minutes.
  • 2
    Line a baking sheet with parchment paper. Shape the dough into two loaves and flatten them well; otherwise, the center won’t cook through. Beat the last egg and brush it over the tops of the loaves using a pastry brush.
  • 3
    Bake for 40 to 45 minutes in an oven preheated to 180°C.
  • 4
    As soon as they come out of the oven, slice each loaf before they harden.
