This simple and delicious recipe comes from our Italian grandmother. The sauce is known as a "white" sauce—meaning it contains no tomatoes—but it also contains no cream; instead, the potatoes provide the thickening and velvety texture.

This sauce is enriched with diced ham, veal, and baby vegetables, making it irresistible!

  • For the sauce
  • Image de cured ham
    300 g of cured ham Keep the fat
  • Image de veal tenderloin
    100 g of veal tenderloin thick slice
  • Image de onion
    3 onions large
  • Image de carrot
    1 carrot
  • Image de leek
    1 leek
  • Image de potato
    1 potato
  • Image de celery
    1 branch of celery
  • Image de parsley
    1 bouquet of parsley
  • Image de thyme
    2 branches of thyme
  • Image de bay leaf
    1 sheet of bay leaf
  • Image de white wine
    50 cl of white wine
  • Image de water
    50 cl of water
  • Image de salt, pepper
    salt, pepper
  • For pasta
  • Image de spaghetti
    500 g of spaghetti or tagliatelle
  • Image de Parmesan
    1 bag of Parmesan

Sauce Gènovèse de Mémé Vizzini : instructions

  • 1
    Peel and slice the vegetables. Puree the carrot and potato. Dice the veal and ham.
  • 2
    Brown the meat and vegetables together in a Dutch oven.
  • 3
    Once the vegetables have softened, add the water and white wine, and cover. Let simmer over very low heat for 30 minutes.
  • 4
    Season with salt and pepper to taste. Serve this sauce over spaghetti, topped with Parmesan cheese.
