Here’s my recipe for foie gras and fig cake—it’s perfect for a pre-dinner cocktail party during the holiday season!

It’s a very easy dish to prepare, and you’ll only need ingredients you already have on hand. In particular, you don’t need raw or semi-cooked foie gras for this recipe—canned foie gras works just fine. And for the figs, you can use dried figs that you rehydrate in tea.

Ingredients for Cake au Foie-gras et aux figues

    3 eggs
  • Image de flour
    150 g of flour
  • Image de baking powder
    1 bag of baking powder
  • Image de whole milk
    12,5 cl of whole milk
  • Image de grated Gruyère cheese
    100 g of grated Gruyère cheese
  • Image de duck foie gras
    300 g of duck foie gras or goose, canned, cooked (no need for partially cooked here!)
  • Image de dried fig
    10 dried figs
  • Image de tea
    1 bowl of tea
  • Image de salt
    1 pinch of salt
  • Image de pepper
    2 pinch of pepper

Cake au Foie-gras et aux figues : instructions

  • 1
    Preheat your oven to 180°C (gas mark 6).
    Make some tea and soak the figs in it for about 30 minutes.
  • 2
    In a mixing bowl, whisk the eggs, flour, and baking powder until well combined. Gradually
    stir in the warmed milk, salt, and pepper. Add the grated Gruyère cheese.
    Mix well.
  • 3
    Dice the foie gras and figs, then stir them into the base.
  • 4
    Pour the mixture into an ungreased pan.
  • 5
    Bake for 45 minutes.
  • 6
    Enjoy it warm or cold—it’s delicious either way 😋

Notes

WHAT TO DRINK WITH THIS FOIE GRAS AND FIG CAKE? Sweet Jurançon, Monbazillac (light, not too rich), Côteaux du Layon, Saussignac, sweet Gaillac.

These wines offer freshness, fruitiness, and a hint of honey; they’ll perfectly complement this cake as an appetizer!
