Here is my recipe for a delicious, exotic dessert: coconut milk with chia seeds. Chia seeds, which originate from Mexico, are very rich in protein, fiber, and omega-3 fatty acids. When soaked in liquid, these seeds begin to swell.
They can absorb up to seven times their volume in water. The mixture then takes on a very pleasant, creamy consistency dotted with small, plump beads.
This dessert is both nourishing and very easy to prepare. It pairs well with all kinds of fruit, especially exotic fruits like mango or passion fruit.

Too many seeds for my taste… Next time I'll use only 2 tablespoons of chia seeds.
I made the passion fruit version—it’s absolutely delicious… the coconut cream balances out the fruit’s tartness, and the chia seeds give it the perfect creamy texture… I have a feeling I’ll be making this a lot!
