Here is my delicious recipe for coconut milk chicken curry, inspired by Thai cuisine.

As you’ll see, it’s an easy recipe to prepare, since it only takes a few steps and uses ingredients that are easy to find.

It’s also gluten-free and lactose-free (GFLF), so it’s suitable for all diets.

Ingredients for Chicken Curry with Coconut Milk

  • Image de chicken breast
    4 chicken breasts
  • Image de onion
    2 onions
  • Image de peeled tomatoes
    300 g of peeled tomatoes net weight (undrained)
  • Image de coconut milk
    40 cl of coconut milk
  • Image de red curry paste
    2 tbsp of red curry paste Adjust according to your taste and the manufacturer's recommended dosage
  • Image de fresh ginger
    1 finger of fresh ginger
  • Image de cinnamon
    2 sticks of cinnamon
  • Image de oil
    2 tbsp of oil
  • Image de lime
    2 limes
  • Image de fresh cilantro
    1 bouquet of fresh cilantro
  • Image de jasmine rice
    300 g of jasmine rice

Chicken Curry with Coconut Milk : instructions

  • 1
    Slice the onions.
    Pour the oil into a wok or Dutch oven.
    Sauté the onions in it.
  • 2
    Peel and grate the ginger.
    Add the grated ginger and cinnamon to the pot.
  • 3
    Next, add the curry paste and stir well.
    Be sure to taste the sauce, and adjust the amount of curry paste to your taste and according to the manufacturer's instructions. I've ruined a curry before by using too much!

    Cut the chicken breasts into pieces.
    Add them to the wok and stir-fry for a few minutes.

    Add the peeled tomatoes and coconut milk.
    Simmer for 20 minutes over low heat.
  • 6
    Rinse and chop the cilantro.
    Add the lime zest, then the juice.
    Season with salt and pepper.
  • 7
    Sprinkle the dish with freshly chopped cilantro just before serving.
