I fell in love with these matcha financiers while dining at a Korean restaurant.

So here’s my top recipe, after several attempts! Serve these little treats warm with a scoop of ice cream, and you’re sure to make everyone at the table happy.

Matcha tea not only gives the batter a striking green color, but it also adds a unique flavor that perfectly complements the butter.

Ingredients for Financiers au thé vert Matcha

  • Image de butter
    260 g of butter
  • Image de powdered sugar
    100 g of powdered sugar
  • Image de egg
    6 eggs Only the egg whites will be used in this recipe.
  • Image de flour
    75 g of flour
  • Image de almonds
    125 g of almonds ground
  • Image de brown sugar
    20 g of brown sugar
  • Image de Matcha green tea
    15 g of Matcha green tea
  • Kitchen utensils
  • Image de financier pan
    financier pan If you buy a silicone mold, make sure it's a "Platinium" model, as it's more heat-resistant.

Financiers au thé vert Matcha : instructions

  • 1
    Make brown butter: melt it gently in a saucepan, and let it cook until a layer of foam forms on the surface and brown spots appear. Turn off the heat and strain it through a sieve lined with a cloth. The butter has taken on a beautiful golden color and will release aromas reminiscent of crème brûlée...
  • 2
    Combine the powdered sugar and brown sugar, almonds, flour, green tea, and a pinch of salt.
  • 3
    Gradually fold in the egg whites until the mixture is smooth. Then pour in the clarified butter and stir until the batter is smooth.

    Let it cool for 15 minutes in the freezer or one hour in the refrigerator.
  • 5
    Preheat the oven to 180°C.
  • 6
    Fill the financier molds with batter. Place them on the middle rack of the oven. Bake for 20 minutes at 180°C.
  • 7
    Remove from the pan as soon as they come out of the oven and enjoy them warm with a scoop of ice cream!

    Dégusté ces financiers concoctés amoureusement par 3 gentils cordons bleus pour un Réveillon de Noël. Ils étaient jolis, odorants, délicieux

    J’ai servi ces financiers au dessert lors de notre dîner de réveillon et on s’est régalé… ils sont à la fois croustillants et moelleux à l’intérieur, et le macha leur donne une couleur et une saveur carrément originales. Merci Cookette !
