The Citre, also known as Méréville, Gigérine, or Citre de Provence, is a light green squash shaped like a pear.
This variety is also known as “jam watermelon” or “white watermelon.”
The fruit can be the size of a large, round, green-striped melon or a large, pale green, oval watermelon, depending on the variety and the number of fruits left on each plant. The seed-filled flesh is whitish, dense, not very sweet, and has a mild flavor.
This fruit is not eaten raw, but only cooked in the form of pies, watermelon jam, jellies, or candied fruit, as the gigérine contains a lot of pectin.
Since the flesh of the gigérine is rather bland, the jams are flavored with a choice of: rum, vanilla, lemon, cinnamon, orange peel, or star anise.
