The "miraculous squash" is a traditional dish from the Franche-Comté region. This dish serves as a sort of ambassador for all the region’s local products, since the squash is stuffed with a filling rich in cheese, cured meats, and white wine!

After being hollowed out and stuffed, it is closed up as if nothing had happened, and baked in the oven.

When the "lid" is opened, a mixture of squash flesh and stuffing is served to delighted guests. In fact, the squash itself is so infused with all these flavors that even after the stuffing is gone, you can still enjoy its flesh 😋

    1 pumpkin whole
  • Image de Morteau sausage
    1 Morteau sausage
  • Image de bread
    8 slices of bread
  • Image de button mushrooms
    10 button mushrooms
  • Image de garlic
    3 pods of garlic
  • Image de grated cheese
    100 g of grated cheese Comté-style
  • Image de white wine
    20 cl of white wine
  • Image de crème fraîche
    20 cl of crème fraîche
  • Image de salt and pepper
    salt and pepper

Courge miraculeuse : instructions

  • 1
    Cut a lid about 6 to 8 inches in diameter from the top of the pumpkin.
    Remove all the seeds.
  • 2
    Cook the Morteau sausage in water for 30 minutes.
  • 3
    Meanwhile, slice the mushrooms and sauté them in a pan.
    You can add a little garlic if you like.
  • 4
    Toast the slices of bread, then rub them with garlic before arranging them in the bottom of the pumpkin.

    Arrange slices of Morteau sausage and mushrooms on top, then cover with grated cheese.
  • 6
    Drizzle with white wine and cream, season with salt and pepper, and repeat with a second layer.

    Cover the pumpkin with its lid and bake in the oven (160°C) for 3 hours.

Notes

The quantities are approximate; they depend on the size of the pumpkin and your personal taste.

You can vary the recipe by adding slices of potato (pre-cooked), chestnuts, etc.
