What is jasmine rice?

Long-grain and delicately fragrant, jasmine rice—also known as Thai rice—is one of the hallmarks of Southeast Asian cuisine. Its name can be misleading: it does not contain jasmine flowers.

Its floral scent is natural, derived from an aromatic compound present in the grain—2-acetyl-1-pyrroline—which develops particularly during cooking and subtly evokes the scent of fresh jasmine.

Where does jasmine rice come from?

Native to Thailand, where it is called Khao Hom Mali (“jasmine-scented rice”), it is primarily grown in the plains of the country’s northeast. Soil and climate conditions—soil type, humidity, and the alternation of dry and rainy seasons—play a decisive role in the intensity of its aroma.

Harvested once a year, dried, hulled, and then carefully polished, it retains this distinctive aroma that sets it apart from other long-grain rices.

Culinary Uses of Jasmine Rice

Today, jasmine rice is widely consumed in Thailand, Vietnam, Cambodia, and Laos.

It pairs equally well with Thai curries and Vietnamese stews such as caramelized pork, wok-fried dishes, or grilled meats served with fresh herbs.
