Here is my recipe for a broad bean casserole, perfect for enjoying this fragrant vegetable that’s typical of spring.

Broad beans can be a bit of a hassle to shell and “strip” (see further down in the recipe), but the result is well worth the effort, and you can even get your kids to help out!

Ingredients for Baked Broad Beans

  • Image de broad beans
    1 kg of broad beans unshelled, or one-third if they are already shelled (such as frozen ones)
  • Image de garlic
    2 pods of garlic
  • Image de onion
    1 onion
  • Image de carrot
    1 carrot
  • Image de cumin
    1 tsp of cumin
  • Image de water
    1 glass of water

    Shell the fava beans into a bowl.

    Blanch them for 5 minutes in a pot of boiling water. Remove them with a slotted spoon and rinse under cold water.

    You can now "shell" the beans—that is, remove the skins from them. Set them aside in the bowl.

    In a casserole dish, sauté the finely chopped onion and carrot in a little olive oil for 2 minutes, stirring occasionally.

    Add the fava beans, finely minced garlic, and cumin. Pour in the specified amount of water, cover, and simmer over low heat for 15 minutes.

Notes

A few variations: 

- To keep with the spring theme, you can also add snow peas to this broad bean casserole

- This broad bean casserole pairs well with bacon bits or cured ham sautéed in a little oil and added at the end of cooking
