Baked Broad Beans

Instructions
Shell the fava beans into a bowl.
Blanch them for 5 minutes in a pot of boiling water. Remove them with a slotted spoon and rinse under cold water.
You can now "shell" the beans—that is, remove the skins from them. Set them aside in the bowl.
In a casserole dish, sauté the finely chopped onion and carrot in a little olive oil for 2 minutes, stirring occasionally.
Add the fava beans, finely minced garlic, and cumin. Pour in the specified amount of water, cover, and simmer over low heat for 15 minutes.
Notes
A few variations:
– To keep with the spring theme, you can also add snow peas to this broad bean casserole
– This broad bean casserole pairs well with bacon bits or cured ham sautéed in a little oil and added at the end of cooking
