Here is my easy and incredibly tasty recipe for plant-based sobrasada. For those who aren’t familiar with this product, sobrasada (sobresada in Spanish) is a cured meat specialty from the Balearic Islands, made with ground pork, paprika, and spices. Its soft texture and slightly spicy flavor make it ideal as a spread to enjoy on a slice of bread.

In this recipe, we’ll make a spread that resembles sobrasada but is completely vegan, with no meat or animal products! This spread is perfect for a cocktail party, where it will suit all tastes and dietary needs (including lactose-free and gluten-free).

The secret? Simply sun-dried tomatoes, blended with cashews, along with pimentón de la Vera—or smoked paprika—a highly prized condiment in Spain that gives chorizo its characteristic flavor.

It’s actually amazing—when you taste this vegan sobrasada, it will immediately remind you of the taste of chorizo. Yet, there’s absolutely no meat in it!

Ingredients for Vegetarian sobrasada

  • Image de dried tomatoes
    300 g of dried tomatoes
  • Image de cashews
    180 g of cashews
  • Image de Pimentón de la Vera
    2 teaspoons of La Vera paprika (smoked paprika), or, if unavailable, sweet paprika
  • Image de garlic
    2 pods of garlic
  • Image de olive oil
    60 ml of olive oil
  • Image de salt and pepper
    salt and pepper

Vegetarian sobrasada : instructions

  • 1
    Soak the sun-dried tomatoes in a bowl of warm (but not boiling) water for 20 minutes.
    Drain them and reserve the soaking liquid.
  • 2
    Place the tomatoes, paprika, garlic, and cashews in the food processor bowl.
    Add the oil, and process until you have a smooth paste.
  • 3
    Adjust the consistency of your plant-based sobrasada by gradually adding the soaking liquid from the sun-dried tomatoes.
