The best rice pudding in the world!

Here is my recipe for rice pudding flavored with pandan and orange blossom. Pandan is a plant widely used in Asian cuisine. You can find pandan leaves at specialty grocery stores and Asian supermarkets.

Of course, you can also flavor this rice pudding in a more traditional way. In that case, you’ll use a scraped vanilla bean instead.

What makes this pandan and orange blossom-scented rice pudding a success is the choice of ingredients. As for the milk, it’s raw whole milk. If you can’t find any, microfiltered milk will do. At a pinch, if you really only have pasteurized whole milk, that’s acceptable.

But if you only use low-fat milk (yuck!) or even skim milk (double yuck!), there’s no point in even trying.

Finally, regarding the rice, it must be short-grain rice of the same type used for risottos.

  • Image de whole raw milk
    1 liter of whole raw milk
  • Image de short-grain white rice
    125 grams of short-grain white rice
  • Image de granulated sugar
    60 grams of granulated sugar
  • Image de pandan
    2 leaves of pandan
  • Image de orange blossom water
    2 tbsp of orange blossom water

    In a saucepan, heat the milk, adding the chopped pandan leaves and orange blossom water. If you’re using vanilla, add the vanilla seeds and the pod.

    Once the milk has come to a boil, add the rice and let it simmer over very low heat for 1 hour without stirring. After an hour, add the sugar, stir well, and let it cook for another 10 minutes.

    Remove from the heat and take out the pandan leaf pieces (or the vanilla bean). This is when you’ll regret having had this idea. You’ll find that it’s better to cut the leaves into large pieces rather than tiny ones. The more adventurous among you can do it like me with chopsticks; the masochists can use their fingers.

    Pour the rice pudding into a bowl and let it cool to room temperature. You can enjoy it warm, or if you prefer it cold, place it in the refrigerator.
