The best rice pudding in the world!
Here is my recipe for rice pudding flavored with pandan and orange blossom. Pandan is a plant widely used in Asian cuisine. You can find pandan leaves at specialty grocery stores and Asian supermarkets.
Of course, you can also flavor this rice pudding in a more traditional way. In that case, you’ll use a scraped vanilla bean instead.
What makes this pandan and orange blossom-scented rice pudding a success is the choice of ingredients. As for the milk, it’s raw whole milk. If you can’t find any, microfiltered milk will do. At a pinch, if you really only have pasteurized whole milk, that’s acceptable.
But if you only use low-fat milk (yuck!) or even skim milk (double yuck!), there’s no point in even trying.
Finally, regarding the rice, it must be short-grain rice of the same type used for risottos.
