In this dark chocolate brownie recipe, inspired by the excellent Traité de Miamologie – Les Fondamentaux de la Pâtisserie, Stéphan Lagorce, 180°, 240 pages, I’ve tried to reduce the amount of sugar in my brownie without compromising its rich, indulgent flavor.
Additionally, this dark chocolate brownie can easily be adapted for a gluten-free diet by using rice flour, for example.
